CLASSIC CREPES SUZETTE
- simple but impressive dinner party dish
Crêpes Suzette
For added drama, you can flambé the sauce at the table. The pancake recipe is very versatile and can be used with any number of savoury or sweet fillings (see below)

Perfect served with ‘homemade’ Orange liqueur

EASY
SERVES 4-6
COOKING 25-35 minutes
(Can all be prepared in advance and re-heated to serve).

INGREDIENTS
FRENCH PANCAKES
(makes 10 -12)
  • 2 large eggs
  • 100g plain flour
  • 200mL milk
  • a splash of water
  • 1tablespoon of oil or melted butter
  • 1pinch of salt

METHOD
1. Whisk all the ingredients together in a bowl
2. Add enough water to create a batter that resembles double cream.
3. Allow to stand for ½ an hour.
4. Heat a frying pan so butter sizzles immediately.
5. Carefully wipe the hot frying pan with scrunched up kitchen roll dipped in oil.
6. Spoon about a ladle full of the pancake batter into the pan moving the pan so the batter spreads evenly.
7. Cook on a high heat till the underside has browned.
8. Flip and cook the reverse.
9. Put the Pancake to one side and repeat until all the batter is used up.

ORANGE SAUCE
  • 100g butter
  • 50g sugar
  • 50g muscovado sugar
  • zest of 2 oranges
  • juice of 2 oranges
  • ½ glass of orange liqueur
  • 250mL double cream to serve

METHOD
1. Cook the zest gently in the melted butter for 5 minutes add the remaining ingredients.
2. Stir to dissolve the sugar and cook over a medium heat for about 10 minutes to reduce slightly.
3. Add the liqueur to the hot sauce just before serving.

TO SERVE
1. Fold the pancakes in to quarters and arrange on a serving dish or individual dishes.
2. Warm through in a medium oven and pour over the hot sauce.
(Optional: For a bit of drama, in a small pan, warm through some brandy take it to the table, light, and pour over the pancakes)

3. Present with double cream and a glass if iced orange liqueur. (see recipe below)


HOMEMADE ORANGE LIQUEUR
- this is so simple and delicious you must try to make it. Do take care though - it is also so easy to drink. Watch out for the hangovers!

VERY EASY 10 minutes to make

INGREDIENTS
  • 75mL Gin
  • Zest of 2 oranges
  • 250g sugar

1. Stir sugar into the Gin until it dissolves.
2. Add the range zest.
3. Bottle and store for 2 weeks before drinking

ALTERNATIVE PANCAKE IDEAS

SEAFOOD PANCAKES
Sauté chopped onions in butter, add white wine, dill double cream, lemon zest and a little stock. Reduce and toss in prawns or mixed seafood. Wrap in a pancake. Grate with cheese and cook in the oven till bubbling.

SPICED APPLE PANCAKES
Soak raisins in some booze and a little hot water. Sauté apple quarters in butter with mosquavado sugar, ground cinnamon or mixed spice. Add the soaked raisins. Wrap the mix in the pancakes. Warm through and serve with double cream.
